Production process
Remove green skin
Fill a large container with water. Then add some salt.
Rinse the peeled shallots briefly in brine.
Remove the onions from the water and drain and slice the shallots very thin. (Cut in half and cut into thin slices).
Heat oil in a frying pan or wok. When the oil is hot, place the thinly sliced shallots. Stir and fry for about 5 minutes until the onions begin to brown.
Reduce heat to low to medium levels. Stir-fry for another 2 minutes. Then reduce the heat.
Continue to stir and fry until the shallot slices become reddish brown. Make sure that the sliced onions have a noticeable color change (so that they remain crisp even after cooling), but be careful not to burn (otherwise they will become bitter).
Drain the crispy shallots onto the sieve. Then put the shallots on a plate on a kitchen paper towel to remove excess fat.
After completely cooling, store in a sealed container.
